Ingredients
Vegetables:
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 red onion, chopped into chunks
- 1 red bell pepper, sliced
- 1 tea spoon fresh thyme leaves
Dressing:
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and freshly ground black pepper, to taste

Instructions
Step 1: Prep the Vegetables
Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper. Toss the chopped carrots, zucchini, red onion, and red pepper with olive oil and thyme in a mixing bowl.
Step 2: Roast the Veggies
Spread the veggies in a single layer on the tray. Roast for 25-30 minutes or until they are golden and tender, flipping halfway through for even cooking.
Step 3: Make the Dressing
In a small bowl, whisk together balsamic vinegar, honey, salt, and black pepper.
Step 4: Dress and Serve
Once the veggies are out of the oven, drizzle the dressing over them while still warm. Toss gently and serve immediately.
